Two Tasty And Nutritious Snacks- Mushroom Fritters And Banana Fritters

Mushroom fritters
Mushrooms need not always be cooked in sauces but can be enjoyed as snacks also. These fritters have a lovely, juicy flavour which makes you reach out for more. This can be made in a jiffy and gives you all the goodness of mushrooms.
Ingredients:
Fresh Mushrooms – 10 Corn flour – 1/2 cup Plain flour – 1/2 cup
Cayenne pepper – 1/2 teaspoon
one egg
salt
oil for frying
Preparation:
Clean the mushrooms and slice each one lengthwise into two. Prepare a batter by mixing together cornflour, plain flour, chilli powder, salt and egg. The batter should be of pancake consistency.
You may add little water if the batter is too stiff. Heat oil in the pan, dip each piece of mushroom in the batter and fry till it is slightly brown. Drain on a paper towel and serve hot with ketchup.
Button mushrooms are best suited for this snack . If it is not available, other mushrooms may also be used.
Banana fritters
Select ripe South American bananas which have pink, firm flesh for this snack as regular bananas won’t come out crisp for this recipe. Don’t select bananas which are overripe as this will absorb lot of oil while cooking. This snack will be loved by kids and can be easily prepared.
Ingredients:
Two large bananas One cup plain flour Three teaspoons of Sugar
a pinch of salt (optional) a pinch of turmeric for color (optional) 1/4 teaspoon of cumin seeds Oil for frying.
Preparation:
Peel and cut the bananas into two. Then slice each piece lengthwise into three pieces of even thickness. If the banana is not very thick, you can slice it into two. Prepare a batter by mixing together the plain flour, sugar, salt, turmeric and cumin seeds with little water.
The batter consisitency should be that of pancake mixture. Coat each banana piece with the batter and fry on both sides till it is crispy and bright yellow. Drain on a paper towel and serve.
For more flavor, you can mix an egg also in the batter for these fritters.
