The message is being heard loud and clear. Obesity is out of control and we have to do something about it. New York City has been leading the charge to get America healthy. They started off with one of the first city-wide smoking bans in 2003, then they banned the purchase of sugar sweetened beverages with food stamps, and now the Bronx will be home to anti-obesity affordable housing.

I had no luck finding any real vanilla beans for V-Week, but this Coconut-Vanilla Ice Cream still turned out delicious! Vanilla beans contains small amounts of B-vitamins such as niacin, pantothenic acid, thiamin, riboflavin and vitamin B-6. These help in enzyme synthesis, nervous system function and regulating body metabolism.

Although we don’t have an ice cream maker, the steps were easy to making this healthy coconut-vanilla ice cream, and the kids can all get involved in helping!
