Getting Clever With Ice Pops {and giveaway}

My kids love ice pops! We haven’t bought commercial ones in several years. The ones purchased in the stores are full of sugar and artificial food dyes. They are easy enough to make on our own anyway (and cheaper). We have used the leftover pineapple juice from our canned pineapple to make them. We’ve used blended up fruit. Of course we’ve used plain old juice anytime we have some. The kids even started making the ‘popsicles’ themselves considering how easy it is.

However, in our years of making ice pops, we’ve never been as creative as Anni Daulter! Anni has made a whole collection of Ice Pops that include vegetables, yogurt, tofu, chocolate, teas, nuts, wheat germ, herbs, and pure fruit. Adding these healthful foods to your ice pops is a great way to include some of these ingredients for even the pickiest eaters! Here is one of my favorites from her new cookbook called Ice Pop Joy

Bing Cherry Tofu Pop Recipe by Anni Daulter

  • 1/3 cup silken tofu
  • 2 cups pitted, fresh Bing cherries (or frozen cherries)
  • 2 cups fresh squeezed orange juice (from approximately 6 oranges)
  • 1/4 cup raw agave nectar
  • 1 tsp. wheat germ
  1. Combine tofu, cherries, and orange juice in a blender, and puree to desired smoothness.
  2. Add agave nectar and wheat germ and mix.
  3. Puree until smooth.
  4. Pour mixture into chosen pop molds and put sticks in place.
  5. Freeze pops until solid.

Makes 6 (4 ounce) pops.

I think getting creative with ice pops by adding healthy food is a great way to introduce your kids to new foods, new flavors, and new textures while they are experimenting with what they like! Start brainstorming with your kids and let them think about things they can add like kale and pistachios!
